a roast style for our offerings that we believe optimizes the coffees' strengths & attributes; however, we will gladly roast
and package to custom order upon request. We will rotate our selections and on occasion may be temporarily out of stock.

COFFEES FROM THE AMERICAS
Our AMERICAS family of coffees hail from Mexico through virtually all of Central America, then on down through the continent
of South America - including Bolivia, Brazil, Colombia & Peru. These coffees are all very different, but they do present some
similar characteristics: bright, snappy, nutty & fruity; what most New Englanders & other coffee lovers look for in a straight-ahead
cuppa joe.
Bolivian Yungas (Organic & Fair Trade) $9.99
Bolivian coffee has underperformed in the past as a specialty coffee. But, today they have come a long way. This is a fine,
classic example. In terms of taste in the cup: nutty, medium bodied, with some sweet fruitiness;a very South American coffee
from a small mountain co-op.
MEDIUM ROAST
Brazil - DaTerra (Organic & Bird Friendly) $9.99
Brazil is the world's largest coffee producer. But, this is no mass-market blend. Consisting of several different bean types,
our Brazilian blend is rich, creamy and sweet. Makes a great single cup or even a good espresso. The DaTerra farms are known
world wide for their industry-leading practices. Quality is job one here! The proof is in the cup. Enjoy!

Colombian Mesa de Los Santos (Organic, Rainforest Alliance, Bird Friendly) $9.99
A pioneer in sustainable coffee agriculture, this farm is the first in Colombia to produce/export specialty organic coffees.
This is 100% Colombian coffee, not just in origin but in performance; balanced, creamy, well-bodied; another solid all-around
winner!
LIGHT ROAST
Costa Rica La Minita Estate - $12.49
La Minita, a pedigree coffee for sure, is milder in acidity than other Tarrazu region coffees. We roast it to bring out a
creamy sweetness with awesome balance. The estate is a model of highest quality; the coffee - Always a classy cup.
MEDIUM ROAST
Costa Rica Decaf $10.99
Like our other fine decafs, this one's processed by a new, cleaner Mountain Water Process (different from Swiss Water Process).
The original character is much better maintained - a medium body with a bright snap. Mild, but not weak; slightly nutty &
crisp.
MEDIUM ROAST
El Salvador Santa Rita (Rainforest Alliance & Organic) $9.99
This is like most El Salvadors - soft, pleasant coffees with relatively subdued acidity. This cups similar to our milder Mexican
& Guatemalan coffees. We offer the best grade of El Salvador coffee - Strictly High Grown; it is also shade-grown.

Guatemala Maya Ixil (Organic & Fair Trade) $10.99
Our newest Guat is a blend from several small farms in a Fair Trade Co-op. This selection offers a slight nuttiness with mild,
chocolate tones; a light fruitiness, too. Different from our other Guats - a bit softer, rounder cup of Guatemalan coffee.
LIGHT ROAST
Honduras Raos (Organic & Fair Trade) $9.99
We are pleased to share this smooth, rich coffee which comes from small Honduran farms which are part of a co-op. Unlike other
Central Americans we roast this longer to accentuate the fullness with a little floral finish. Overall the RAOS is a well-balanced
cup.
DARK ROAST
Mexican Chiapas (Organic & Fair Trade) $9.99
Chiapas produces some of the very best and highest-grown Mexico coffees. This is a nutty, snappy coffee that is also rich
and smooth. The acidity can get sharp as the coffee cools. Like virtually all of our organics, this one is shade grown as
well.
LIGHT ROAST
Nicaragua Selva Negra (Organic & Fair Trade) $9.49
Coffees from Nicaragua are only now getting attention in the States. This java from the Matagalpa region is considered one
of the best they offer. The Selva Negra Estate is also internationally recognized for its efforts in sustainability & environmental
stewardship. Its flavor is somewhat sweet.

Peru la Florida (Organic & Fair Trade) $10.99
We roast this dark to bring out a strong spiciness and rich, coffee flavor (can even taste a bit like bittersweet cocoa).
From a cooperative of small-holding farmers in a remote area of northern Peru.
DARK ROAST
Peru la Florida Decaf (Organic & Fair Trade) $10.99
Roasting this a little lighter gives this Mountain Water Processed decaf a little richer body and overall balance than its
regular Peru counterpart from the same estate. It is still a lively cup that is not muted in the decaf process. Good, medium
bodied decaf.

COFFEES FROM THE ISLANDS
Our ISLANDS family of coffees come from some of the most enchanting island locations in North America - Hawaii, Jamaica &
Puerto Rico. According to Ken Davids, at www.coffeereview.com, "Caribbean coffees,
including the celebrated Jamaica Blue Mountain, tend at their best to be big-bodied and roundly balanced with rich, low-key
acidity". We roast our Island coffees light to medium to maintain their mellowness & smoothness while still wowing the
palate with big body.
Hawaiian Kona - MARKET PRICE
The Big Island produces one of the most famous coffees in the world; despite the big price and marketing, this is actually
a simple but sweet, deeply resonant coffee with a smooth body and chocolate-toned fruit notes; rich, straightforward, almost
tart finish. The grade is called FANCY.
MEDIUM ROAST
Jamaican Blue Mountain Wallensford Estate - MARKET PRICE
Often the most expensive coffee on the market & still shipped in barrels, JBM is relatively rich, soft, with a touch of acidity
that makes the cup somewhat bright & snappy. This is well-balanced, smooth & mild and a bit on the pricey side; but always
a classic Island style coffee from the famous Wallensford Estate.

Puerto Rico Yauco Selecto $MARKET PRICE NOT CURRENTLY IN STOCK (04/08)
A best value for a superpremium (Hawaiian Kona, Jamaican Blue Mountain). This is a superb example of the Caribbean taste,
soft yet powerful, with a fragrant, fruity sweetness. We roast this to highlight sweet, caramelly notes; still has a little
sharpness with the acidity we leave behind. Excellent choice!
MEDIUM ROAST
COFFEES FROM AFRICA (and ARABIA)
The cradle of civilization also was the birthplace for coffea arabica.Some of the world's most distinctive coffees
are grown in East Africa & the Arab Peninsula regions. These often remarkable coffees are characterized by a variety of striking
floral and fruit notes, from the almost perfume-like floral and citrus character of Ethiopia wet-processed coffees through
the intensely acidy and berry-toned Kenyas. This family of coffees also includes two of the world's oldest and most traditional
origins: the Harrar & Yirgacheff coffees of north-eastern Ethiopia and the Arabic coffees of Yemen. Both display variations
on a wild, complex, slightly fermented fruitiness that many coffee lovers find seductive.
Yemen Moka Mattari (or Sanani) $11.49
This rare coffee is complex, & the most fragrantly powerful of Yemen origins. The market name Sanani describes a blend of
coffees from various regions west of Sana'a, and is more balanced, less acidy, and less complex than the Mattari. Both are
roasted dark to bring out a wild, earthiness. An exotic find, indeed!
FRENCH ROAST
Ethiopian Yirgacheff (Organic & Fair Trade) $9.99
Ethiopia, considered the origin of coffee today, yields coffees that are among the world's most distinctive. Our Yirgacheff
displays the wine- and fruit-toned acidity characteristic of African and Arabian coffees. It is high-toned and alive with
strong citrus and flower tones.

Ethiopian Harrar $9.49
We offer the celebrated and often superb coffee of Harrar, where all coffee fruit, including the best and ripest, is put out
in the sun to dry, fruit and all. The result is a coffee that is wild, fruity, complexly sweet, with a slightly fermented
aftertaste.
LIGHT ROAST
Kenya AA $9.99
Kenya is a most universally admired origin of specialty coffee. It has the advantage of consistently high growing altitudes,
soil and climate that contribute to fruit and wine tones typical of this region. Grade AA is the largest coffee bean size.
This one is a very clean, balanced cup – a solid performer; rich and slightly chocolaty.
DARK ROAST
COFFEES FROM INDONESIA
The best-known and most distinctive Pacific coffee origins are grown in the chain of islands that make up the nations of Indonesia,
Timor and Papua New Guinea. These coffees also include the deep-toned traditionally processed coffees of Sumatra, Sulawesi.
They are are sweet, floral and low in acidity, as we roast mostly in the medium to dark range.
Sulawesi Toraja $9.99
Toraja is named after the colorful indigenous people of the region. This coffee is deep, rich, and has a sweet-toned aroma;
heavy body and robust mouthfeel in the cup. Like with other Indonesians, sweet & syrupy, too.

Sumatra Gayoland (Organic & Fair Trade) $9.49
One of our best sellers for a dark roast. The cup is enveloped in richness. The Gayoland is a Mandheling. This market name
applies mainly to the finest of the traditional arabica coffees of northern Sumatra. Rich, sweet; great hot or iced; also
finishes chocolaty.

Sumatra Decaf $10.99
It is very much a Sumatra cup profile but a bit cleaner and less earthy than its non-decaf Mandheling counterpart. It has
all the body expected in a Sumatra cup, interesting & aromatic. All this makes for a bass-heavy balance in the cup, as well
as the very low level of acidity.

Timor coffee is often caught in the turmoil of its political environment. In terms of taste, full, round, smooth, sweet, and
